VASCO’S TAKES ITS DINERS TO GOA
Guests at Hilton Abu Dhabi can now enjoy the laidback lunchtime popular along the beaches of Goa with a special menu served for a week at Vasco’s.
ABU DHABI –: Vasco’s at Hilton Abu Dhabi welcomes Chef Sandeep Bisht from DoubleTree by Hilton Hotel Goa – Arpora – Baga to bring a slice of the idyllic beaches of India to the heart of Abu Dhabi.
Starting from February 22nduntil, the nautical-themed beachside restaurant will serve a Goan menu which features traditional favourites including pomfret recheado, chicken xacuti, mutton vindaloo and crab xac xac.
Chef Sandeep Bisht, guest chef at Vasco’s, said: “I am honoured to cook with the chefs at Vasco’s and Hilton Abu Dhabi, and to show our guests how Goan cuisine is a good example of “East meets West”. The dishes are prepared using Indian cooking methods which evolved through years of Portuguese influence and is focused on the use of ingredients like palm vinegar, coconut milk and a variety of spice combinations.”
The special menu kicks off with Kokum Sharbat, a refreshing drink made with Kokum, a Goan delicacy, followed by a Goan village salad and Caldo Verde, a Portuguese green soup.
Starters include Beef Chilli Fry, Rava-fried seafood, and Chicken Cafreal made with chicken marinated overnight in coriander and vinegar. Local favourites like Kismur, which are dried prawns cooked with grated coconut, also appear on the menu. A selection of Goan curries are served as mains with a side of rice or bread and Indian pickle.
Chef Sandeep gives guests at Vasco’s a glimpse of why Goa is popular for its baked treats and pastries with the selection of desserts. Made with coconut, clarified butter and egg yolks, Bebinca is a hugely popular sweet dish in Goa. Dodol has a hint of palm jaggery for sweetness, while Serradura tempts the palate with a mix of crushed tea biscuits and whipped cream.
